I know that if I take the time to make a healthy alternative to a favourite treat, it needs to be super delicious to gratify my efforts.
This coconut cashew ice cream is dairy-free, gluten-free and right up there in terms of ease and yumminess. It’s perfect for a weeknight treat to satisfy any sweet cravings you might have, whilst still loading your body with health and vitality.
No processed sugars are used (only honey is used for sweetening) and it’s definitely high in feel-good factor.

Ingredients : (serves 6-8)
- 2 cans (13.5 fl oz) coconut milk, unsweetened and full fat (preferably chilled)
- 4 tablespoons honey
- 1 pinch salt
- 1 tablespoon vanilla extract
- 3/4 cups raw unsalted cashews
1- Blend together in a blender or food processor until well combined (around 2 minutes)
2- Pour into a freezer-safe container and place in the freezer for at least 6 hours
3- Remove from the freezer for at least 10 minutes before serving
